The tea plant has long been cultivated in China. It is an evergreen shrub or tree that can grow to a height of 30 feet, but is usually maintained at a height of 2 to 3 feet by regular pruning. Green tea is produced by lightly steaming the fresh-cut leaf and oxidation is not allowed to take place because the steaming process inactivates useful enzymes present in green tea leaves.
Green tea extract is made from the dried leaves of Camellia Sinensis, whose major active compounds are the tea polyphenols. Commercial powdered extracts are available in Phytoway Inc. that with normal caffeine content or have been decaffeinated and concentrated for polyphenols, anywhere from 40 to 98 percent.
Tea leaves are the fermented and/or dried leaves of Camellia sinensis. Havesting takes place under stringent quality control. Green Tea is produced by steaming the fresh-cut leave. Black Tea is produced by allowing the leaves to oxidize. During oxidation, enzymes present in the tea convert many of the polyphenolic therapeutic substances to less active compounds. Oxidation does not occur with Green Tea because the steaming process inactivates the enzymes responsible for oxidation. The anti-oxidant activity of Green Tea is six times greater than that of Black Tea. |
